Coconut oil defies all conventional thinking: it’s high in saturated fat, it helps you burn fat, maintain excellent cardiovascular health, and even improve athletic performance. The question isn’t whether you cook with coconut oil or not, the question is, why aren’t you doing it yet?

Another key fact about coconut oil is that it can be cooked at high temperatures without corrupting its health benefits. Not so for olive oil. When you cook olive oil at high temperatures it actually turns into trans fat which contributes to disease and weight gain. How many times have you put olive oil in a pan and it smokes up after it gets hot? That’s the composition changing.
Trans fat essentially builds up the bad form of cholesterol that contributes to cardiovascular disease, while at the same time, decreasing the good form of cholesterol (yes there is such a thing).
Polynesian cultures have one of the lowest rates of cardiovascular disease and this is directly attributed to a diet high in coconut oil.

Olive oil is healthy if you don’t cook with it. For example, it’s great for salad. Cook with coconut oil, salads with olive oil.
